1. heat olive oil in a sauce pan over medium low heat, (carefull not to get oil to hot or it will become bitter)
2. once oil is hot, add both hot smoked paprika and sweet smoked paprika and toast for 30 seconds while whisking to combine
3. add flour and whisk until raw flour smell is gone, about 1 min
4. add broth gradually while whisking constantly to avoid clumping
5. reduce to low heat and simmer for 5 min, stirring occasionally until sauce is thick, add salt to taste
6. peel and dice potatoes into bite-sized pieces
7. heat a pot of neutral flavored oil to 350 degrees farenheight
8. once oil is hot, fry potatoes in batches until halfway cooked, place potatoes on a paper towl lined rimmed baking sheet and let cool
9. once cooled, fry potatoes again until golden brown and toss in a bowl with salt to taste while it is still hot
10. plate potatoes and pour desired amount of bravas sauce over potatoes
