This exquisite dish pairs well with the Barbera but I suspect it would do with any of our fuller bodied wines as well. This is made much like a Bolognese but a using Lamb with a kiss of mint and ricotta as garnish it is sublime.
Delicious and nourishing, this winter salad is sure to fill the bellies of a hungry crowd. Pair with mineral and herbaceous white wine, like older vintage Vermentino, white Rhones, or Silver Fork Hard Cider.
