Sweet Potato Black Bean Chili (Vegan)
A tasty variation to our traditional chili. Loaded with sweet potatoes, hominy, black beans, garlic & spices! Topped with cilantro, avocado, sour cream & green onions.
Ingredients
- 1 Large Onion
- 1 Large Sweet Potato
- 4 Cloves of Garlic
- 15 ozs Can of Black Beans
- 15 ozs Hominy
- 1 Small can of Diced Chili Peppers
- 3 cups Vegetable Broth
- 15 ozs Can of Diced Tomatoes
- 1/2 cup Red Wine (your choice)
- 1 tbsp Chili Powder
- 2 tsps Cumin
- 2 tsps Sweet Paprika
- 2 Cinnamon Sticks
- 2 Bay Leaves
Directions
Sautee onions and chopped garlic in 2 tbls olive oil until tender.
Add vegetable broth, tomatoes, beans, hominy, and diced chili peppers.
Add seasoning with a 1/2 cup of wine.
Simmer on low for several hours.
