Production Notes
The wine was made in three different lots with each fermented and aged separately and blending at bottling. The grapes were sorted and de-stemmed. Musts cold soaked for 3 days then inoculated with cultured yeasts. Manual punch downs were carried out three times a day, with a total maceration time of 10-14 days. The wine was aged for 18 mos. in French Oak before bottling.
